Our day begins with a visit to a local alimentare. Here you will find an abundance of local cheeses, salami & prosciutto, wines and other gastronomical products.
Then it's off to visit a lively outdoor market with fresh produce, meats and fish. Take a look at everything from home-made pastas & gnocchi, an abundance of fresh produce, local olives, breads and more. At the market we'll purchase our ingredients for today's cooking class and then head back to the Flavor of Italy Cooking School to prepare a delicious meal.
The dishes we prepare will be made with only the freshest local, in season ingredients. We want you to learn to make the Italian dishes you are interested in so with Flavor of Italy's guidance you will choose the menu.
Once everything is prepared we will sit down to enjoy the fruits of our labor along with some flavorful local wine.

Some of our one day cooking classes have a regional focus, as do the weeklong culinary vacations we offer throughout Italy. Enogastronomical tours focus on visiting producers of regional products (Modena's balsamic vinegar, Campanian mozzarella di buffalo, Montalcino's Brunello wine) If you are looking for a culinary program or corporate event with a specific regional focus let us know and we will be happy to organize one up for you.
Italy's cuisine is extremely regional and you will find vast difference in dishes every hundred miles or so. Italy's varied cuisine is in part a reflection of its location in the middle of the Mediterranean and its rich history with neighboring countries and foreign powers. Sicilian cuisine, for example, is strongly influenced by a mixture of Roman influence, Arab influences dating both to the time that Sicily was an Arab province (sweet & sour dishes using raisins and pine nuts), and to more recent trade with North Africa (cuscus, for example), Norman French influence, Spanish influence and Greek influence.
In Rome you will find a strong Jewish influence dating back to the 1500s, when Jews fleeing the Inquisition settled in the city. Carciofi alla giudia is an example (whole deep fried artichokes).
Climate and farming are also important factors. The hot south yields an abundance of citrus fruits (used to make liqueurs such as limoncello) and succulent vegetables. Tomato-based dishes dominate central and southern Italy, along with dishes that use wonderful greens that grow wild in the fields.
Coastal areas tend to use a lot of fish in their menus and cook heavily with olive oil. The north uses olive oil in cookery but also butter and lard, reflecting a cooler climate and the influence of northern Europe. Rice growing has flourished in Emilia Romagna and Tuscany, but the Po valley remains the most fertile area of cultivation and not surprisingly it is the area where rice consumption is at its highest. Risotto recipes are many and varied.
